做法:春(chūn )笋(sǔn )切成片后加(jiā )少许(xǔ )盐(yán )捞出(chū )后用清(qīng )水(shuǐ )浸(jìn )泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺(sháo )油,放(fàng )入生(shēng )姜(jiāng )、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再加(jiā )入生抽、老抽(chōu )、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入盐,翻(fān )炒均匀稍(shāo )收汁时盖(gài )上锅盖焖。
