做(zuò )法(fǎ ):洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用(yòng )清水把陈(chén )皮泡软,拍(pāi )裂(liè )一小块姜,热(rè )锅,用(yòng )姜(jiāng )块在锅上擦一遍(biàn ),放两(liǎng )勺油,待油六成热(rè )下鱼(yú ),煎至微黄。煮(zhǔ )沸瓦煲里(lǐ )的(de )清水(shuǐ ),放(fàng )入煎(jiān )煮好的鲫(jì )鱼(yú )和其他(tā )材料,武(wǔ )火煮沸,转(zhuǎn )中(zhōng )小火(huǒ )煲一(yī )个半小时,下盐调味(wèi )即可品尝(cháng )。
