做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山和(hé )薏米(mǐ )。用清水(shuǐ )把陈(chén )皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅(guō ),用姜(jiāng )块在(zài )锅上擦一(yī )遍,放(fàng )两勺油,待(dài )油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦(wǎ )煲(bāo )里的清水(shuǐ ),放入煎煮(zhǔ )好的(de )鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中小火煲(bāo )一个半小(xiǎo )时,下盐调味即(jí )可品(pǐn )尝(cháng )。
