做法(fǎ ):春笋(sǔn )切成片后加(jiā )少(shǎo )许(xǔ )盐捞出(chū )后用清水浸泡,生姜(jiāng )切(qiē )片,葱切(qiē )成(chéng )段(duàn )。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒(chǎo )均(jun1 )匀(yún ),加入少(shǎo )量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大(dà )火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干的时(shí )候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖(mèn )。
