做(zuò )法:洗(xǐ )净宰好(hǎo )鲫鱼,洗净淮山和(hé )薏(yì )米。用(yòng )清(qīng )水(shuǐ )把陈(chén )皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用(yòng )姜块在(zài )锅上擦一遍(biàn ),放(fàng )两勺油,待油六(liù )成热下鱼,煎(jiān )至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎(jiān )煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火(huǒ )煮沸(fèi ),转中(zhōng )小火煲一个半小(xiǎo )时,下盐调味即可品尝。
