做(zuò )法(fǎ ):春笋切成片后加少(shǎo )许(xǔ )盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切(qiē )片(piàn ),葱(cōng )切成段。锅烧热(rè ),倒入(rù )2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春(chūn )笋,盖上锅盖(gài )大火煮开后(hòu )转中火(huǒ )。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁(zhī )时(shí )盖上(shàng )锅盖(gài )焖。
