做法:洗净宰好鲫(jì )鱼(yú ),洗净淮山和薏米(mǐ )。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦(cā )一遍(biàn ),放两勺油(yóu ),待油六成(chéng )热下鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里(lǐ )的(de )清水,放入(rù )煎(jiān )煮好的鲫鱼和其他材(cái )料,武火(huǒ )煮沸,转(zhuǎn )中小(xiǎo )火煲一个半小(xiǎo )时(shí ),下盐调(diào )味(wèi )即(jí )可品(pǐn )尝。
