做法(fǎ ):春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生(shēng )姜切(qiē )片,葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱(cōng )段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少(shǎo )量(liàng )清水半(bàn )掩住(zhù )春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加(jiā )入(rù )盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅盖(gài )焖。
