做(zuò )法:春(chūn )笋切(qiē )成片后加少(shǎo )许盐捞出后(hòu )用(yòng )清水(shuǐ )浸(jìn )泡,生(shēng )姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝(háo )油翻(fān )炒(chǎo )均(jun1 )匀,加入(rù )少量清(qīng )水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候(hòu )加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时(shí )盖上锅盖(gài )焖。
