做法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生(shēng )姜切(qiē )片(piàn ),葱切(qiē )成(chéng )段(duàn )。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜、春笋、牛(niú )肉(ròu )片、葱(cōng )段翻(fān )炒(chǎo )1分钟(zhōng )左(zuǒ )右。再加入生抽、老(lǎo )抽、蚝油(yóu )翻炒均(jun1 )匀(yún ),加入(rù )少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的(de )时候加(jiā )入盐,翻炒均匀稍(shāo )收汁(zhī )时盖(gài )上(shàng )锅盖焖。
