做法:春笋切成片后加(jiā )少(shǎo )许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅(guō )烧(shāo )热,倒入(rù )2勺油(yóu ),放入(rù )生姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加入(rù )少(shǎo )量(liàng )清水(shuǐ )半掩住春(chūn )笋,盖(gài )上锅盖(gài )大(dà )火(huǒ )煮(zhǔ )开后转中火。煮到(dào )水快(kuài )熬干的(de )时(shí )候加入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
